1 package split peas
1 packet Souper Spices-Split Pea Soup Mix
1 ham hock
1 large carrot-diced
6 C water, chicken, vegetable or beef broth
Salt & pepper
Preheat slow cooker on high. Add 6 cups boiling water (stock) split peas, diced carrots, ham hock and Split Pea Soup Mix packet. Mix well. Cover and cook on low 8-10 or high 4-6.
Stove top directions:
Rinse and sort beans/peas. Place beans in a large pot with 4 cups of water. Bring to a boil and cook for 2 minutes. Turn off heat, cover and let beans soak for an hour. (You can also soak beans overnight in 4 cups of water) Drain and rinse. Return to pot with 4 cups water and simmer for 11/2-2 hours adding water if necessary.
In a medium soup pan, add 1 1/4 quarts water, precooked split peas as directions above, diced carrots, ham hock and Split Pea Soup Mix packet. Mix well. Bring soup to a boil, reduce heat and simmer for about 2 hours covered.
