My mother, Wilma, has allowed me to share her secret recipe to the world. This is the best and I have never changed it. It’s a great meal topper full of spiced flavor.
1 3/4 C canned pumpkin
3/4 C sugar
½ tsp. salt
2 Tbsp. butter-melted
1 ½ tsp. Souper Spices-Pumpkin Pie Blend
1 ¼ C evaporated milk
Beat eggs until frothy in medium bowl. Add pumpkin, sugar and salt and blend well. Stir in melted butter then add milk in last. Let this mixture sit for about 15 minutes. Meanwhile, make a crust for a 9” pie plate or use a prepared crust. Pour mixture into crust and place in a preheated oven at 450° for 15 minutes. Reduce to 350° and bake an additional 45 minutes. Pie is done when you can insert a knife in the center and it comes out clean. Cool and serve with a dollop of whipped cream.
